An organic farm
The Azienda Agricola Cossentino is located on the hill of the Gulf of Castellammare, in the
contrada of Lavoratore/Costa di Bisaccia (350m above sea level). This is one of the most beautiful
and suggestive productive areas of Alcamo DOC. The traditional autochthonous vines, such as
Catarratto, Inzolia, Grillo and Nero d’Avola, have been flanked by allochthonous vines such as
Chardonnay, Cabernet Sauvignon, Merlot and Syrah, which in these lands have found soil and
climatic conditions suitable for the maturation of their grapes and production of great wines.
The high density of the plant (5000 strains/ha) and the pruning method, aimed at obtaining low
yields, are further guarantees for the quality of the grapes which, when fully ripe, they are picked by
hand and placed gently in boxes. The processing is in the same company, a few minutes from the
harvest, and the rapid cooling of the pressed grapes ensure the preservation of the fragrance of the
fruit during the vinification process. Only for red wines wood is carefully used, 500 litre barriques
and tonneaux, for an optimal maturation that safeguards the fruit using carefully new barrels and
second use ones.
The olive trees scattered throughout the farm complement the production with refined oils that are
offered in the varieties Biancolilla and Cerasuola. The employees of the Azienda Agricola
